I have not played Society in a while. What does it mean by 'Core'? Only rules from Core rulebook?

You create a Core character and identify it as such when you register it on the Paizo web site. Basically, the advantages of playing a Core campaign are:
1. You can replay a scenario you have played in the traditional RPG scenarios. (So, you could play scenario X once for credit in the traditional Society play and again for credit in the Core play.)
2. This simplifies the game for some people that don't have 28 different source books to look up. (It can be intimidating for some people that come into play and have others around playing the more exotic character classes.)
If you play a Core character, then you are only allowed to use classes, spells, abilities, etc. from the Core Rule Book and the Guide to Pathfinder Society. If you get a special magic item that is not in the CRB on a chronicle sheet, then that item is unlocked for that character, but otherwise, you must stick to the CRB and GPS. Core characters are only allowed to play in Core scenarios. If a Core character plays in a traditional scenario, it becomes a traditional character and can never go back to the Core campaign. Traditional characters can not play in the Core campaign.

Okay, i have a couple first levels, never played, jyst have to change out a couple things. They are registered on Paizo as core. Can I update them as such?

As long as the only source material being used for them is the CRB and GPS, you can...
